- 1/2 cup of blueberries
Method:
Add the egg, oil, water, vanilla essence, and lemon zest to a mixing bowl and whisk until combined, then add the flour, sugar, salt, and baking powder, in a separate bowl, Whisk until combined. Add the dry ingredients in stages to the wet ingredient bowl, mixing until all the ingredients are combined and there are no lumps.
The consistency should be quite thick but still pourable. If it’s too runny the blueberries will sink to the bottom and won’t be evenly distributed. To increase its thickness, gradually add more flour. add the blueberries to the muffin mixture and stir gently to combine. Using a spoon, add a small amount of muffin mixture to each muffin case. Place the muffins in their cases into the air fryer and set to 175°C for 17 minutes. After 15 minutes, open the air fryer and check on your muffins. If they’ve risen and the top looks golden brown, you can remove them early. remove and serve!

- 1 boneless, skinless chicken breast
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- ½ cup unsalted butter, melted
- ½ cup breadcrumbs
- 2 tablespoons grated Parmesan (optional)
Method:
- Preheat the air fryer to 200°C for 4 minutes.
- Trim any fat from the chicken breast. Slice into thick pieces, then cut each slice into 2 to 3 nuggets. Season with salt and pepper.
- Place the melted butter in a small bowl and the breadcrumbs (with Parmesan, if using) in another small bowl.
- Dip each piece of chicken in the butter, then coat with breadcrumbs.
- Place the nuggets in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to bake in two or more batches.
